My research interests focus on the role of dietary carbohydrates in health and disease, especially in the prevention and treatment of non-insulin dependent diabetes. Current research projects include: (a) effect of carbohydrate foods and meal components on blood glucose and insulin responses, (b) effect of cereal fiber on appetite and metabolic responses (c) role of diet in the prevention and treatment of non-insulin dependent diabetes, (d) effect of long-term fiber intake on colonic short chain fatty acids, (e) production, absorption and metabolic effects of colonic short chain fatty acids
